Limiting the Menu

There may lots of great food ideas, but you are opening a pizza and sub shop which should include items to fit that atmosphere. In the beginning, you might be tempted to add “popular” items and extras to round out your menu. It’s better to keep it simple and offer things you do better than your competitors.

A simpler menu makes things easier for your servers, hostess, phone staff, kitchen help, delivery drivers and for you. Everyone’s job is easier when there are fewer things to keep straight. When you focus on less things, you will need larger quantities of specific items. This should enable you to negotiate better prices which is helpful in controlling costs.

You and your staff need to be familiar with every item. Can they describe each item? Have you shown them ways to subtly upsell the customer? Can they explain what ingredients are included for customers with special dietary needs? Have your employees tasted each item on your menu? Offer samples to your employees because many customers will ask about an item before they order. The more positive things your staff can say about your menu items, the better they can help your customers.
